Our Philosophy
Over the years we have seen many new techniques, trends, and fashions come and go. We believe in seasonality and the genuineness of dishes that satisfy the eye as well as the taste buds; dishes that are light and healthy. We are open to experimenting in the kitchen, but with an eye to tradition.
We follow the seasonality of all the products: meat, fish, vegetables, fruit, cheeses, and charcuterie. In a globalized world where anything can be found everywhere at any time, it is a luxury to enhance locally-sourced sustainable produce.
